Turkey laksa
Ingredients
Serves 1
1½ tsp coconut oil
1 clove garlic, peeled and crushed
15g ginger, peeled and grated
2 kaffir lime leaves (optional)
1 green chilli, sliced
30g laksa paste
140ml coconut milk
140g cooked turkey breast, shredded
50g cooked rice noodles
2 tsp fish sauce or light soy sauce
To serve
Small bunch mint, leaves torn
Small bunch coriander, leaves torn
Lime wedges
Method
Heat the oil in a saucepan, add the garlic, ginger, lime leaves and half of the chilli and fry quickly for a couple of minutes until fragrant. Add the laksa paste, fry for a minute then pour in the coconut milk and 200ml water. Bring to a simmer and cook gently for 5 minutes.
Add the turkey, noodles and fish sauce and heat through. Ladle into a serving bowl, top with the herbs and remaining sliced chilli then serve with the lime wedges.
