Turkey laksa

Ingredients

Serves 1

  • 1½ tsp coconut oil

  • 1 clove garlic, peeled and crushed

  • 15g ginger, peeled and grated

  • 2 kaffir lime leaves (optional)

  • 1 green chilli, sliced

  • 30g laksa paste

  • 140ml coconut milk

  • 140g cooked turkey breast, shredded

  • 50g cooked rice noodles

  • 2 tsp fish sauce or light soy sauce

To serve

  • Small bunch mint, leaves torn

  • Small bunch coriander, leaves torn

  • Lime wedges

Method

Heat the oil in a saucepan, add the garlic, ginger, lime leaves and half of the chilli and fry quickly for a couple of minutes until fragrant. Add the laksa paste, fry for a minute then pour in the coconut milk and 200ml water. Bring to a simmer and cook gently for 5 minutes.

Add the turkey, noodles and fish sauce and heat through. Ladle into a serving bowl, top with the herbs and remaining sliced chilli then serve with the lime wedges.
